Synopsis

“Start with food…and just add Pasquale!” – TV Guide

In 1959, Chef Pasquale Carpino arrived in the U.S. from Calabria in southern Italy with eight dollars in his pocket, a guitar on his back and very few words of English. Pasquale’s Kitchen Express was the #1 rated daytime television program on the Discovery Channel from 1990-1992.

Chef Pasquale rose to international fame as the “singing chef “ by entertaining the audience with renditions of his favorite opera arias and Neapolitan fishing songs. In between cooking, he shares his belief that, “Mama is the best chef,” and “The best restaurant in the world is home.”

Chef Pasquale’s philosophy of “la cucina expressa” is to cook a full-course meal for four people in less than 30 minutes with market fresh ingredients. His dishes call for ample use of sauces, fresh herbs and wine. Homemade chicken stock is added to almost all dishes, as are liberal amounts of cheese, and, of course – lots of garlic! Chef Pasquale believes that no food should be wasted, finding imaginative ways to use everyday ingredients.

Pasquale’s Kitchen Express Volume 1 includes the following episodes:

Episode 1: Rigatoni with Belgian endive sauce, chicken with mushrooms, filet of cod with tomato sauce, salad with white relishes.

Episode 2: Penne with bacon and dandelion, lamb chops with an orange barbecue sauce, stuffed squid with crabmeat, melon and vegetables with homemade dressing.

Episode 3: Linguini with a cream sauce, stuffed mushrooms, white snapper, veal chops with lemon barbecue sauce.

Episode 4: Risotto with fresh tomato and tomato sauce, filet of trout with tomato sauce, chicken cutlets with rosemary in a cream sauce.

Episode 5: Bowtie pasta with a cream and mushroom sauce, fresh sardine casserole, pork and chicken stew with vegetables, salad with homemade dressing.

Episode 6: Orecchiette pasta with calamari and tomato sauce, filet of cod in butter, T-bone steak, bananas with warm orange syrup.
